The Perfect Sear

When searing a protein, it is best to let it get to room temperature prior to cooking. The pan should also be at a high temperature, right before smoking point.


This allows the protein to be tender and crispy on the outside.


After cooked, let the protein rest for 3 minutes so that the protein remains juicy.
